On-the-go breakfast oat cups

I love fall, but the cold is always an adjustment! It makes me want to get cuddly on the couch and meal prep is a lot less appealing. 

If you've been following me for a while you know I am a breakfast enthusiast. Of course, the most delicious foods are breakfast foods. But seriously, breakfast is the most important meal of the day! If you're a breakfast skipper or someone who finds yourself hustling every morning and needing to rely on quick grab and go options from various eateries, then this post is for you!

My lovely friend, Becky Fernandez, a registered dietitian and cooking/baking extraordinaire is sharing her favorite on-the-go breakfast. Becky relies on these oat cups to fuel her through a busy morning. I love them as a snack or with coffee on the weekend. The best part is they are totally versatile! They are gluten and dairy free. You can make the basic recipe or mix it up with one of her flavor options. These freeze well so make a few batches for the next week.

Directions. Makes ~18 cups

1. Preheat oven to 375 degrees.

2. Mix dry ingredients until just combined.

3. Using a 1/4 scoop, portion batter into a greased or lined muffin tin. Bake for 20 minutes.

4. Eat!!!

Two for breakfast with some fruit is the perfect portion for a filling and fueling breakfast! Add almond butter or peanut butter for some extra fat! Also makes a great snack.

  • 4 c oats
  • 2 1/3 c almond milk
  • 2 bananas, mashed
  • 3/4 c protein powder
  • 1/2 c peanut butter
  • 1 Tbsp vanilla
  • 1.5 tsp cinnamon 
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Add ins: chocolate chips, nuts, dried fruit

  • 1/4 c raisins
  • 1/4 c walnuts (chopped if preferred) 
  • 3/4 c protein powder
